Palate
The palate is finesse par excellence, with silky tannins and bright, clean-edged fruit, crowned with a finish boasting impressively racy tannins.
Nose
Remarkable complexity on the nose, releasing heady fragrances of dark wild berry, pungent spice, and smooth pipe tobacco.
Winemaking
Each grape variety and single vineyard block was vinified separately. Fermentation took place in stainless steel tanks at temperatures between 26-30°C for one week, followed by 10-15 days of maceration on the skins. The malolactic fermentation took place primarily in oak barriques, 70% new and 30% once-used. The wine then remained in barriques, in Tenuta dell’Ornellaia’s temperature-controlled cellars for about 18 months. After the first 12 months of maturation, the wine was assembled and then returned to the barriques for an additional 6 months. After bottling, the wine aged a further 12 months prior to release.
Ornellaia Bolgheri DOC Superiore, the producer's representative wine, is composed of Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. Made for the first time in 1985, it comes from a 97ha domain that enjoys the perfect climate of the Bolgheri hills, with exposure to the sea.
The vines are tended by hand throughout the year. When they are ripe (at full maturity), the grapes from each plot are picked by hand, in boxes of a maximum of 15 kg. The bunches then pass through a double sorting table where any imperfect grapes are removed by hand, ensuring that only perfectly ripe grapes end up being vinified and ripened. The resulting Ornellaia wine is released on the market after 3 years.
Ornellaia 1998 was declared "Wine of the Year" by the American magazine Wine Spectator.
Ornellaia 2010 marks the producer's 25th anniversary. A special logo made of gold and ivory ennobles the bottles.
