Nose
A multi-faceted bouquet with notes of noble wood, fine spices, red forest berries, a touch of cassis and orange zest.
Winemaking
The grapes are carefully hand-harvested in small crates and undergo an initial sorting in the vineyard to ensure only the finest fruit is selected. Each berry is then manually destemmed and meticulously sorted again on a sorting table. The berries are transferred by gravity into 30–70 hl wooden vats, where a low-temperature pre-fermentation maceration takes place to preserve aromatic freshness and color. Fermentation involves gentle manual punching down to delicately extract tannins and flavor, with total maceration lasting 30 to 40 days. After fermentation, the wine is run off by gravity into French oak barrels, where it undergoes malolactic fermentation. The wine is then aged for 18 months in oak barrels, allowing it to develop depth, complexity, and balance before bottling.
