Late Harvest Riesling 375 ml - 2021 - Casablanca Valley
Bright golden yellow color.
Pleasant sweetness balanced by fresh acidity that gives an excellent structure and a long finish.
Aromas of acacia honey, lemon peel, quince jam, and ripe apricot on the nose.
Picking is carried out by hand, only selecting bunches that present at least 40% of noble rot. After harvesting the grapes were destemmed, pressed, and left to macerate overnight in order to dissolve the dry fruit. The next day they were pressed and the resulting juice was left to cold settle for two more days before racking into clean stainless steel tanks, where it was inoculated with selected yeasts and left to ferment at temperatures of 16 to 22°C. Upon reaching 11.5% of alcohol, the tank was cooled to cut fermentation, and later racked and sulfites. The wine was cold-stabilized and filtered. Bottling was carried out in February 2022.
