Visual
Pale, green-tinged yellow.
Palate
Densely packed and rich but tightly wound and youthfully austere, with classic saline minerality to the citrus peel and pepper flavors. This very fine-grained wine finishes with terrific energy, grip and spicy length.
Nose
High-pitched aromas of lime, white pepper and spices.
Winemaking
Aging for 9 months, 40% in regulated stainless steel tanks / 60% in barrels for 9 months (2/3/4-year-old barrels – less than 5% of new oak) and 6 months blending in tanks before bottling. 100% of the malolactic fermentation. Natural tartaric stabilization after 12 to 16 months of aging.
