Winemaking

Each grape variety and each block of plots is vinified separately in stainless steel tanks for better quality control. The sorting of the grapes is done manually. Maceration on the skin lasts 10-15 days, and alcoholic fermentation takes place at 26- 30 Celsius degrees. Malolactic fermentation starts in stainless steel tanks and finishes in small oak barrels, where maturation also takes place. Maturation for 15 months, 75% in "barriques" at the cycles II-IV and 25% in new "barriques". After the first 12 months, the wine is assembled and returns to "barriques" for another period of 3 months. The wine is kept in the bottle for 6 months prior to being released on the market.

  • Le Serre Nuove dell'Ornellaia is the "second wine" produced by Ornellaia, following the same philosophy of the great Bordeaux Chateaux. The first year of production was 1997, with the wine having the same appellation of origin, coming from the same terroir and grape types, the same vineyard practices, vinification processes and aging in oak barrels as the Ornellaia wine. Made mostly from the estate's younger vines, Le Serre Nuove dell'Ornellaia can be described as a more youthful approach to Ornellaia wine. The complexity and structure of the Cabernet Sauvignon and Cabernet Franc grapes are complemented by the silky roundness of the Merlot grape and the freshness and crisp acidity of the Petit Verdot grape.
