Palate
A generous and juicy opening is followed by rich and firm tannins, while the finish is aromatic, velvety and persistent.
Nose
Ripe black fruit aromas, spices and lightly toasted woody notes.
Winemaking
The grapes were handpicked into 15 kg baskets. The bunches were selected by hand on a double sorting table before and after de-stemming, then soft-pressed. Each variety and each parcel of land was vinified separately. The alcoholic fermentation occurred partly in stainless steel tanks and partly in concrete vats at temperatures between 22-28°C for two weeks, followed by maceration for about 10-15 days. The malolactic fermentation took place in stainless steel after which the wines were racked into barriques (25% new and 75% used once). The wine remained in barriques in Ornellaia’s cellars for about 15 months. After the first 12 months, the wine was blended and then returned to the barriques for an additional three months of aging. The wine then remained in the bottle for another six months before release.
Le Serre Nuove dell'Ornellaia is the "second wine" produced by Ornellaia, following the same philosophy of the great Chateaux of Bordeaux. The first year of production is 1997, the wine having the same designation of origin, coming from the same terroir and types of grapes, from the same practices used in the vineyard, vinification process and maturation in oak barrels as in the case of the Ornellaia wine. Made mostly from the estate's younger vines, Le Serre Nuove dell'Ornellaia can be described as a more youthful approach to Ornellaia wine. The complexity and structure generated by Cabernet Sauvignon and Cabernet Franc are complemented by the silky roundness specific to Merlot.
