Visual
Purple red.
Palate
The palate is medium-bodied with a ferrous grip that knots together with some excellent acidity. The flavours are more of the black fruit with some attractive herbal notes highlighting the Cabernet Franc.
Nose
The nose is a mixture of red and black fruit with pencil lead and sous-bois and a hint of incense.
Winemaking
The fruit is carefully hand harvested and then sorted again in the winery before stem removal and fermentation of whole berries. Only pumped over twice a day, the extraction of the aromas and colour is careful. Once the perfect balance has been achieved the wines are pressed directly into the French oak barrels (32% new) and remain on gross lees for 20 months undergoing a natural malolactic fermentation. After aging, the wines are then selected for blending.
