Visual

Bright yellow.

Palate

Full-bodied, with caramel and honey flavors, fresh acidity and creamy texture.

Nose

Wonderful bouquet of candied lemons, apples, apricots, honey and subtle hints of caramel.

Winemaking

Vinification: during maceration, the indigenous microflora gives character to the must. After the maceration the alcoholic fermentation occurs at controlled temperature in barriques used once, twice or thrice before, for about two weeks. No malolactic fermentation. After 6 months of maturation in French oak barrels (barriques), the wine remains on fine lees in horizontal stainless steel tanks for 5 years. The 2016 Vintage Collection was bottled in May 2022 and continued to mature for over 2 years before being released on the market.
