Visual

Deep ruby.

Palate

Medium to full-bodied, lightly textured and focused on the palate, with plenty of tannins.

Nose

Aromas of Herbs de Provence, lavender, cherry, raspberry, licorice and pepper.

Winemaking

The grapes are hand-picked, with double sorting at the vine. A third sorting at the winery, gently pressing and traditionally fermented in temperature-controlled stainless-steel and wooden vats for 30-40 days. Maturation in French oak foudres (60hl) for 20-22 months. Bottled unfined and unfiltered, then released at 2 years.
