Palate
The taste is complex and well-balanced between freshness and tannins.
Nose
Pleasant and persistent bouquet with hints of black cherry, licorice, and spices.
Winemaking
The grapes are hand-picked, collected, and transported in boxes. The harvest usually is done in the first decade of October, when grapes reach good phenolic maturity. Destalked and lightly crushed, the grapes are then fermented at 27‐29°C in steel fermentation tanks for 12‐14 days, allowing the evolution of all the typical features of the variety. Malolactic fermentation always takes place in steel tanks. Aging partly in large wood barrels and partly in small ones, for 12/14 months. After bottling, Montepulciano Centovie rests in the bottle, in a temperature-controlled environment for 6-8 months.
