In 1983, the Bernard family decided to buy Domaine de Chevalier. Olivier Bernard was asked to become the architect of the new regime at Domaine de Chevalier, and he was overwhelmed by the scale of the challenge. The family's message was clear. The task was to continue the work started one hundred and twenty years ago and establish a long-term approach to the heritage and quality. With this ambition in mind, Olivier Bernard made many investments in the vineyard and the winery. At Domaine de Chevalier, the historic co-existence of vineyard and forest is a major natural asset. Protected by its vast wooded backdrop, untouched by any outside influence, the vineyard benefits from a microclimate and biodiversity providing benefits that combine to create a high-quality ecosystem. The extension of organic and biodynamic farming to all vineyards managed by Domaine de Chevalier, since 2021, is a decisive step on the path that has been followed since 2010. This fundamental change, the result of in-depth thinking over a long period and subject to gradual implementation, represents unstoppable progress toward organic certification in 2023 of their production.
A few years ago, Olivier Bernard and the team Domaine de Chevalier, committed to make Clos des Lunes, an old vineyard in Sauternes, one of Bordeaux's most appreciated. Over time, this terroir has proven to be capable of producing some of the most outstanding dry white wines. Clos des Lunes is in the heart of Sauternes, a region famous for its sweet wines. Attacked by the noble mold Botrytis Cinerea, the grapes enter the natural ripening process, which is also beneficial for creating dry white wines. The soil and microclimate here are ideal for obtaining white wines with remarkable freshness.
